Ingredients

Chicken Salad

½ cup black olives
½ cup cherry tomatoes
½ cup goats cheese, crumbled
1 cup basil leaves
1 skinless chicken fillet, diced
2 tblspn pine nuts
1 tsp coarse black pepper
1 cup rocket leaves
1 cup baby spinach leaves add Salad Burnett for a cucumber flavor
or/and Mizua and
Lettuce Salad Leaf
1 tblspn lime juice

Dressing

1 tblspn wholegrain mustard
2 tblspn lime juice
1 tblspn extra virgin
olive oil

The Perfect Chicken Salad


Method:

Chicken Salad

Sprinkle 1 tblspn of the lime juice and the black pepper over the chicken. Heat some olive oil in a pan, add the pine nuts and chicken, and cook quickly at high heat, until the surface of the chicken is browned. In a separate bowl, mix the olives, tomatoes, goats cheese, basil, rocket and spinach together. Add the still-warm chicken and pine nuts to the salad, and coat with dressing. Serve immediately.

Dressing

Blend all ingredients together and pour over the salad.
